Monday night is usually entree salad night. I do this because the product I buy at the market or harvest from the garden over the weekend is at its peak. There are many main course salads I like, but my favorite dinner salad is a Salad Niçoise. What’s not to love about all those wonderful flavors from the south of France… Spinach and baby greens, ripe tomatos, french green beans, kalamata olives, capers, eggs, tuna, and a nice vinegrette. C’est la vie!
